Just Baked a Cocolate Brandy Pudding Cake

So when my husband needed a little pick me up I spiced up a homemade chicken soup with 10 jalapeños and decided to bake a dark rich chocolate cake. Mine is so easy…

One dark chocolate cake mix
4 eggs
1 cup of oil
1 cup warm water
1/2 cup brandy
1 chocolate instant pudding

Put everything in my Kitchenaid mixer and blend on high for 4 minutes. Scrape down sides with spatula and pour into oiled bundt pan and bake in preheated 350 degree oven for 55 minutes or until a bamboo skewer comes out clean.

This is similar to my Black Russian cake but I did not have vodka or kahlua this time. I always ad lib 🙂

Let it cool on a platter by an open window and Mmmm it smells like chocolate cake…

You can make a frosting out of powdered sugar and brandy or leave it without frosting. It will be so moist all you want is a cup of nice tea or coffee.
